Longhorn meat only has 140 calories per serving! Its protein, fat and cholesterol levels are amazing in comparison to all the other meats listed.
Switching to Longhorn just makes sense!
While we can tout how healthy longhorn is, don't think it's not delicious! From Briskets to fork tender Chicken Fried Steak, this is by far the best meat ever! I love the taste and it's next to impossible to eat regular beef after having Longhorn. Dry? NO! Tough? Not if you know how to cook it! The best, most tender, juiciest steak I've ever eaten in my life, was a longhorn steak.

Please know that we are a small family farm and we have a small amount of animals that are sold for meat each year. If you want to get on our list, please do so as soon as possible.
We totally get it. Buying a 1/4 or a 1/2 of an entire longhorn is a bit scary. What if you don't like the meat? What if you don't like the cuts?
With this being our family's primary source of protein, I cook this all the time. I'll be honest and tell you what we have and have not liked and how we have made adjustments so that all the meat we get is used and none is wasted.
But what if the expense is still too much?
That's when you call me anyways. I have other clients that are in the exact same boat and I can always coordinate to make sure everyone gets exactly what they want, and all within their budget. That's the beauty of working with a small family farm.

This is an 1/8, 1/4, 1/2, or whole share of a longhorn. With the purchase of a Longhorn Share, you will receive a medley of cuts from both the front and rear portion of the longhorn. These cuts include a Brisket, Cubed Steaks, Stew Meat, Sirloins, Tenderloins, Loin Strips (all steaks cut to 1.25" thick), Shoulder Roast, Ribs, leg bones (to make bone broth, etc) & also about half the meat you receive back will be ground beef.
This is the expense owed to us for the cost of raising a longhorn just as nature intended. We raise our animals all natural and without any chemicals, antibiotics, hormones, or heavy metals. You know, all the things that you don't want to eat.
This price also covers the processing expenses.
Please note that this is NOT by hanging weight, although that is the industry standard, and far easier to calculate. What we have decided to do is charge for what you ACTUALLY receive.
Substitutions may be made when available.
Maybe you want to have your meat totally customized to your own specifications, and you are welcome to do that! In this case, you will have to go to the processor when the animal is delivered to them and customize it directly with them. You will also pay them directly for all of your processing expenses. This past year, the average hanging weight for a whole longhorn was 408 pounds. Butcher's typically manage to package up about 50-60% of that.
This will be either the front or hind quarter of the animal. The front will include cuts such as the brisket. The rear will have more of the steaks. The processor will be able to tell you exactly what's available.
This will be one entire side of the animal.
If you decide to do one whole animal, you are free to take it to any processor that you would like, just simply pay us the hanging weight for the whole animal.
Hanging Weight is what the animal weighs once the hide, head, and organs have been removed. You can typically expect to receive back about 50-60% of the hanging weight as your final packaged product.
